From the article: Setting Up a German Grill - How to Grill Outdoors Like a German
At home, we mostly fire up the propane grill, although charcoal grilled food tastes better to me. Then we tried the German "Schwenker" a grill suspended over a wood fire from a tripod. Delicious.

No More Lighter Fluid!
- Years ago when I lived in L.A., my husband and I made fish on a small Weber grill. The flame must have been dying, because my husband quickly squirted some lighter fluid on the coals, and in the process, drenched the fish. That kind of did it for me as far as charcoal grills...I'm not sure if lighter fluid is even sold anymore. We now have an outdoor electric grill, which is quick to use and healthier for us and the environment.

Bring on the Fire
- It has to be hot coals for me. The flames, the smoke, the coughing. What can be better. My husband is the grilling expert in our house but I did make an attempt last week and had to relight the coals 3 times - started to think propane was the way to go. But, when the coals caught and the heat started coming I really thought it was the best.

Favorite Outdoor Cooking Method
- Call me old fashioned by I prefer the hot coals of a beach fire bured down to prefection for roasting fresh ears of corn and potoatoes in their jackets.

Wood Fire
- My favorite in terms of overall experience is anything cooked on an open campfire. But campfires are impractical on my desk, so I usually go with propane. (Agree that charcoal imparts better flavor.)

Smoking
- As much as I like grilled food, I like hot or cold smoking food, too.

grill choice
- My favorite grill is a Weber Smokey Joe because I seldom cook for more than one or two. But I grew up grilling over a "pit" (a concrete block rectangle with a semi-adjustable cast iron grate. In that case we cooked over raw, seasoned wood, not charcoal, so it sounds similar to your schenker. That method bumps up the carcinogens in the smoke, but it sure tastes great!

LOVE TO GRILL!!!
- Peaches cut in half with the stone removed brushed with brown sugar and balsamic vinegar are amazing on the grill. I can't even express how wonderful they are. You can always top your warm peaches with ice cream or whipped cream for even more bliss.

Campfire
- Most of my grilling is done on a propane grill, but there's really nothing that beats grilling over an open campfire. Anything cooked on a wood fire, and eaten after a long day of hiking, tastes delicious to me.
