Apple, Onion and Walnut Spread

The ingredients for this spread are cooked and then placed in a food processor and chopped, so that the spread is smooth.
Makes 1 1/2 cups spread.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 7 T. butter, softened and divided
  • 2 c. chopped, unpeeled apples such as Fuji or Granny Smith
  • 1 c. chopped onion
  • 2-4 T. finely chopped walnuts, hazelnuts or pecans, depending on your taste
  • 1/2 tsp. salt or to taste

Preparation:

Sauté apples and onion in 2 tablespoons of the butter until soft and golden in color. Place in blender or food processor together with nuts and process until smooth or mostly smooth. Mix with remaining butter and salt.

Tip: You can cut back on the butter for a lower calorie spread. Salt to taste or leave out entirely, if you prefer.

This spread freezes well.
