Fruit soups and "Kaltschalen" like this cherry soup are very popular in Europe. A "Kaltschale" is a cold soup made from fruit or milk or even beer or wine. It can be eaten as a first course in the summer or as a light dessert.

Yield: 4 servings
- 1 lb. sweet cherries
- 2 c. cherry juice
- 2/3 c. dry red wine
- 1/4 c. sugar or to taste
- 2 tsp. vanilla sugar or 1/2 tsp. extract
- 2 T cornstarch
- 2-3 T. liqueur such as cherry brandy or amaretto (optional)
- 4 sprigs lemon balm for garnish
Wash and pit the cherries.
Pour off any juice that collects and add purchased cherry juice to make 2 cups.
Mix the juice, red wine, sugar and vanilla sugar or extract in a pan and bring to a boil over medium heat. Add the cherries and cook for 2 minutes.
Mix the cornstarch with a little cold water and pour in a thin stream into the cherry mixture, stirring constantly.
Bring back to a boil and boil 1 minute.
Remove pan from heat, stir in liqueur if using, cool, then refrigerate for at least an hour.
Stir well and serve cold in soup bowls and garnish with lemon balm, if you wish. This makes a good, hot weather, first course or a light dessert.
