This sauce uses gluten free "gums" to add a bit of body to an otherwise simple fruit puree. Now available to the average consumer in small quantities, these natural additives are a big help in the fresh food kitchen.
Try this sauce over waffles, on ice cream, or over your favorite yogurt or cake.
Makes 1 cup sauce

- 1 1/2 c. fresh fruit, peeled and cut into chunks
- 1/4 c. cold orange juice (or orange-pineapple flavor) or 2 T. frozen juice plus 3 T. water
- 1 tsp. powdered Stevia or to taste (optional)
- 1/4 tsp. xanthan gum
- 1/4 tsp. guar gum
Puree fruit (here they are peaches and strawberries), juice, Stevia, xanthan gum and guar gum together. Pass through a sieve to remove any remaining lumps. Serve cold on waffles, cake or ice cream.
Vary fruit acidity by adding more or less sweetener or 1 teaspoon lemon juice to taste. You might try a drop or two of almond or vanilla extract for variety.
