This winter squash salad looks like carrot salad and is just as good to eat. Grated, raw squash can be found at the healthy end of salad bars, so this isn't a new idea. This salad is a great winter alternative to tossed lettuce salads. Fresh and fruity, mixed with apples, it tastes good too.
Serves 4 - 8.
- 2 T. fresh lemon juice
- 1 T. apple juice concentrate
- 1 T. water
- Freshly ground pepper
- 3-4 T canola oil or other neutral oil
- 1 lb meaty winter squash (butternut or acorn, etc.), about 1/2 whole
- 2 small apples
- 2 T. sunflower seeds (optional)
Whisk dressing ingredients (lemon juice through oil) together to make a vinaigrette.
Seed, peel and grate the winter squash (about 3 cups grated). Seed and grate the apple (about 1 cup grated). You may peel the apple, if you wish.
Toss the squash and apple with the salad dressing. Sprinkle with sunflower seeds (optional). Serve.
