Lyoner Wurstsalat - German Sausage Salad

Lyoner is a type of cooked "Fleischwurst" (meat sausage) made from salted pork. It is also called ring bologna, a 2-inch diameter, 18-inch long (approximately) sausage that has been tied together at the ends to form a ring. Lyoner sausage originated in Lyon, France and has come to mean almost any higher-quality bologna, eaten cold.

Try some Lyoner sausage in this light-tasting salad which is often served in Biergaerten (Beer Gardens) or as a snack.

Makes 2 servings of Wurstsalat.

Ingredients:

  • 8 oz. of Lyoner sausage or ring-bologna, sliced thin
  • 1/2 sweet onion, cut into thin rings
  • 1/2 dill pickle, chopped
  • 4 T. oil
  • 2 T. white vinegar
  • 2 tsp. mustard
  • 1 T. chopped parsley
  • 1 tsp. sugar, or to taste
  • Salt and pepper to taste

Preparation:

If the bologna is large, cut the slices of bologna into quarters, otherwise leave whole. Mix the sausage, pickle and onion together in a bowl.

Stir the dressing ingredients together until well blended. Dress the salad with the sauce. The longer it marinates, the better it will taste.

Serve with bread and butter or fried potatoes (Bratkartoffeln).
