This lovely salad is simplicity itself. It is perfect for a fall or winter dinner table, since radicchio and pears are at there peak in cooler weather. A simple vinaigrette with can be changed or even substituted with a blue cheese dressing or (our secret) bottled Italian.

Ingredients:
- 1 pear
- Lemon juice
- 10 radicchio leaves (about 1/2 small head)
- 2 stalks of celery plus leaves
- 1 T. maple syrup (or honey)
- 1 tsp. spicy mustard
- 3 T. neutral oil
Preparation:
Core and slice pear. Sprinkle with a little lemon juice to prevent discoloration.
Wash and dry radicchio leaves and chop coarsely.
Wash and slice celery thinly. If you have any celery leaves that look good, chop them too.
Make a vinaigrette by mixing the maple syrup with the mustard and a little water, then whisking in the oil to form a thick dressing. Season to taste with salt (the mustard has salt already, so you may not need much).
Pour the dressing over the radicchio and celery and toss.
Arrange pear slices on plates, top with salad mixture and serve.
