Ripe, red strawberries are fine on their own, but pair them with cream and homemade ladyfingers and you have a recipe for success. This is a dessert almost no one can pass up.
Note: If you don't have time for homemade cookies you can use store-bought but you might want to brush them with some liqueur such as Cointreau, orange juice, or just sugar water to soften them a bit.
Ingredients

1 pound fresh strawberries

Confectioners' sugar, to taste

1 cup orange juice concentrate, to taste

16 to 24 ladyfingers, depending on appetite

2 cups whipping cream

2 tablespoons whipped cream stabilizer, such as Dr. Oetker

Fresh mint, or lemon balm, for garnish
Steps to Make It

Wash and hull the strawberries. Sort the best ones out (about half of them).

Cut the imperfect ones into pieces and puree, then force through a sieve to make a smooth sauce. Flavor with sugar, stevia, orange juice or liqueur to taste.

Slice the best ones into 4 to 5 pieces per berry.

Whip the whipping cream until stiff, using the whipped cream stabilizer according to directions (optional) and adding sugar or stevia to taste.
Whipped cream stabilizer will help the whipping cream hold its shape when piped through a decorator bag and up to 48 hours. This dessert will taste just as nice if no stabilizer is used, but will not look quite as fancy. -
Place the whipped cream in a decorator bag with a star tip (see step-by-step with photos here).

Spread some sauce on an individual serving plate.

Place two or three ladyfingers on top of the sauce.

Pipe whipped cream around the edges in a pretty design.

Layer the dessert with slices of strawberries.

Pipe more whipped cream on top of the strawberries and lay two or three more ladyfingers on top, like a sandwich.

Decorate the top of the dessert with whipped cream, strawberries, and fresh mint. Dust with powdered sugar.
