"Grütze" is a pudding specialty of northern Germany. The most famous Grütze is called rote Grütze and is made from many different berries and cherries and served with vanilla sauce. German recipes call for very little sweetener, so add more sugar according to your taste and the tartness of the fruit.

Ingredients:
- 2.2-2.5 lb Italian plums (you may use any stone fruit)
- 1/3 c. sugar
- 1 c. apple juice
- 1/4 c. cornstarch
- 1 T. lemon juice
- 1/4 tsp. lemon rind
- 1/8 - 1/4 tsp. cinnamon (optional)
Preparation:
Wash fruit and remove stone. Chop fruit coarsly. Bring juice and sugar to a boil, dissolving sugar.
Add fruit and cook for 3 minutes.
Add lemon juice and rind to taste. Dissolve cornstarch in about 3 tablespoons water. Add to pan in a thin stream while stirring constantly.
Bring back to a boil, stirring until mixture is clear. Remove from heat and cool.
Serve with (sweetened) whipped cream, vanilla sauce, yogurt, creme fraiche, or granola.
