This cherry sauce or compote is often served over ice cream with liqueur and whipped cream to create a wonderful grown up treat. Known as an Amarenabecher, you can find it at most ice cream parlors in the summer.
Makes enough cherry sauce for 2-4 ice cream sundaes, depending on whether afternoon ice cream (2) or dessert ice cream (4).
- 1 c. sweet cherries, pitted (about 6 oz.)
- 3 T. sugar
- 1 T. water
- 1/8 tsp. almond extract
- 1 T. lemon juice
- 1 T. amaretto (optional)
