Using wet hands, scoop the dough onto the flour on the countertop, trying not to degas it very much. Sprinkle the top with flour. Rock it gently while forming it into a rectangle, to make sure flour is covering the entire surface.

At this time you should:

Place parchment paper on the backside of two cookie sheets and sprinkle them with flour.

Start heating oven to 500 degrees Fahrenheit. Move racks to the middle and the bottom. Place an old pan on the second rack (bottom) in the oven.
