German Kischkuchen mit Quarkguss - Cherry Cheesecake


Here is a lovely recipe for a cheesecake made with quark and fancied up with a layer of cherries. If you cannot find quark, do what I did here: Drain one quart of plain yogurt and use in its place. The results are a light and fluffy cheesecake topping that many people crave.

  • ***Crust***
  • 1 c. flour
  • 1/2 tsp. yeast
  • 1/4 c. milk
  • 2 T. butter
  • 1 T. + 1 tsp. sugar
  • 1 egg
  • 1/4 tsp. salt
  • ***Cherry***
  • 1 c. plus 3 T. cherry juice, divided
  • 1/3 c. sugar
  • 2 c. cherries (2 c.) drained, about 2, 14 oz. cans
  • 3 T. cornstarch
  • ***Quark Topping***
  • 4 eggs, separated
  • Pinch salt
  • 2 1/4 c. quark
  • 7 1/2 T. sugar, divided
  • 7 T. oil
  • 3 T. milk
  • 1 1/2 T. cornstarch


Make the dough for the crust

Mix together with spoon, adding a little bit more flour if necessary. Knead in the bowl until smooth and silky. This makes enough dough to fit in the palm of your hand. Oil and let rise 1 hour.

Alternative crusts

Make the cherry filling

Bring 1 cup cherry juice and sugar to a boil, stirring to dissolve sugar. Mix 3 tablespoons cornstarch with 3 tablespoons cherry juice (or water, if not enough juice) and add to hot mixture, stirring constantly until thick. Add cherries, heat through and then remove from heat and cool.

Make the quark topping

Beat egg whites until foamy. Sprinkle 2 1/2 tablespoons sugar and 1 pinch salt slowly over egg whites while beating. When soft peaks form, stop beating and remove to separate bowl.

In same mixing bowl, place the quark, the egg yolks and the rest of the sugar. Mix until well blended. Add the oil and milk and mix again. Sprinkle the cornstarch over the quark and stir until well blended.

Add a third of the egg whites to the quark mixture and stir by hand until mixed and light. Fold in the remaining 2/3 egg whites by hand.

Assemble cake

Roll out the yeast dough into a circle and line an 11 inch springform pan. Press the dough into and up the sides about 1 inch.

Spread the cooled cherries on top of the yeast dough.

Spread the quark batter on top of that and smooth the surface.

Bake at 350F for 50-60 minutes on bottom rack, or until batter appears set. Turn off oven and let cake cool in oven until lukewarm before serving or refrigerating.

To make yogurt cheese

Pour 1 quart of yogurt into a colander lined with several layers of cheesecloth. Fold cheesecloth over top of yogurt, place a plate on top of that which fits inside the colander and a weight on top of that (such as a mug of water). Place colander in or over a bowl and allow to drain two hours or overnight in the refrigerator. (Yogurt should not contain gelatin or the whey will not drain.) You will end up with about half the amount you started.
