Time for salad! Salad? you say? How can it be time for salad? The middle of winter is the perfect time to impress guests or family with salads from winter vegetables which you don't normally think about. Thinly sliced raw fennel, arugula or corn salad which can be harvested, even from under a layer of snow, and beets or cabbage which do well in root cellars are all perfect, refreshing choices.
