Spekulatius cookies before baking

Spekulatius, traditional spice cookies from the western German border to Holland and Belgium where they are known as Speculaas, are pressed into a special wooden mold to create an imprint. Wooden molds can be purchased from several sources, such as cookiemold.com or you might consider carving them yourself.

If pressed for time, however, this cookie dough is just as delicious rolled and cut with standard cookie cutters. All ingredients are American, but the flavor is all European! Recipe here
